Alongside several others, The Noodle Exchange booth (located near the Traveler’s Cafe) is brand new for the 2021 Food & Wine Festival.

Here you’ll find dishes and beverages inspired by flavors of the Far East.

There is a range of noodles, including a spicy Vietnamese Beef Pho and a plant-based Pho option made with tofu. These might not sound appetizing on a summer day, but they are much lighter compared to some soups.

But, if you really want something refreshing to help you cool off, grab yourself a Green Tea Pale Ale, which was one of our favorites of the entire festival.

Shannon: Really boring taste. I don’t even like salt but this needed it.
Heather: Great flavor but tricky to eat. Spicy. The basil really comes through.
Felicia: Another great pho option. Savory broth and delicious beef.

Char Siu Pork Udon

Char siu pork (which literally means “fork roasted” pork) served with enoki mushrooms, bok choy, and soy pickled egg.

Shannon: Liked the light flavors of this. Not too salty. Great flavors.
Heather: Hear me out – I know pho on a hot day sounds icky but the flavor of the broth was delicious. I really loved it.
Felicia: I would love to get this pho at a restaurant in the air conditioning. Great flavor.

Felicia: This has a nice amount of heat to the spice and I love it. This is great.

Tofu Pho

A plant-based (and gluten and wheat-friendly) pho made with tofu and served with enoki mushrooms, and Thai basil.

Shannon: Bland flavor except for a surprising kick.
Heather: Really not a fan of this one. How can something be spicy but also bland?!
Felicia: This was bland and just had heat to the broth. Not for me.
Allyson: This is a nice vegetation option (because there aren’t many), but it’s a lot for a hot day. It has some spice, but bland. I’d rather spend my money at Earth Eats.

Yaupon Brothers Green Tea Pale Ale

From Playalinda Brewing Company in Titusville, Florida, Yaupon Brothers Green Tea Pale Ale is an American Pale Ale with hints of green tea and honey.

Shannon: Yum! A highlight here. Wouldn’t hesitate to order the larger size of this drink.
Heather: Such a light and refreshing beer with hints of green tea. I’d buy this one again.
Felicia: I loved this. It has a subtle green tea flavor that is refreshing and delicious. Love this beer.
Allyson: Loved this so much. Would get it again — as a 12 oz. Such good flavors.

A to Z Riesling

From Oregon, this aromatic Riesling from A to Z Wineworks is rich with fresh citrus and tropical notes.

Our Thoughts

Shannon: Don’t usually like Rieslings, but liked this one. Light, should counter the spiciness of some of the food.
Heather: Something sweet should pair well with the spicy options at this booth, unfortunately this wasn’t the one.
Felicia: If you like alcoholic sugary grape juice, this wine is for you.
Allyson: Much too sweet for me.
